✅ 3 c chicken thigh, raw, bite-sized
✅ 2 c plant-based chicken
✅ 2 lbs. shrimp, peeled & deveined
✅ 1¾ c extra firm tofu, cubed (vegan)
Base & Vegetables:
✅ 6 c Pad Thai rice noodles, cooked (~12 oz dry)
✅ 2 c riced cauliflower
✅ 2 c carrots, julienned
✅ 1 c red onion, thinly sliced
✅ 1 c yellow bell pepper, thinly sliced
✅ 1 c red bell pepper, thinly sliced
✅ 1 tsp fresh garlic, minced
✅ 2 c Napa cabbage, shredded
✅ ½ c green onion, sliced
✅ 1½ c green beans, cut
Dressing & Seasonings:
✅ 1 Tbsp rice wine vinegar
✅ 2 Tbsp avocado oil
✅ 1 Tbsp sesame oil
✅ 2 Tbsp soy sauce
✅ 2 Tbsp fresh ginger, minced
