✅ 2 lbs extra firm tofu, pressed & cubed (vegan option)

Base & Vegetables

✅ 2 cups onions, finely chopped (about 2 medium)

✅ 1 cup carrots, julienned (about 2 medium)

✅ 1–2 fresh serrano chiles, minced

✅ 1 Tbsp fresh ginger, minced

✅ 1 Tbsp fresh garlic, minced

✅ 1 can (28 oz) whole peeled tomatoes, chopped with juices

✅ ½ cup fresh cilantro, chopped (plus more for garnish)

✅ Basmati rice

✅ 10 oz Riced Cauliflower (Keto option)

Dairy & Binders

✅ 1 cup plain yogurt (room temperature)

✅ 1 tsp cornstarch

Seasonings & Spices

✅ 1 Tbsp ground coriander

✅ 1½ tsp ground cumin

✅ ¾ tsp turmeric
